Chicken With Fried Rice Recipe is a dish that is meant to repurpose leftover rice from a day or two day before. The first time we tried cooking fried rice on my own, I made the mistake of using freshly cooked rice. Because it was still so moist and soft, resulting dish was for too gummy-nothing like what my mother cooked.
If you don’t have any leftover rice from the night before, cook a batch of rice and spread it on a large baking sheet or serval large plates. Let the rice dry out for about 45 mins to 1 hour before using it for Chicken Fried Rice.
INGREDIENTS

3/4 Pound boneless chicken thighs
1 Teaspoon salt ( according to taste )
3 Tablespoon oil
3 Eggs, Whisked
2/3 onions, diced
2 cloves garlic, minced
2 teaspoons minced ginger
1 large carrot, peeled and diced
2/3 cup frozen peas,
4 cups cooked rice ( Preferably leftover from at least a day before )

METHOD (CHICKEN WITH FRIED RICE RECIPE)
Chop the chicken for chicken with fried rice recipe into small 1/4 inch to 1/2 inch cubes sprinkle 1/2 teaspoon of salt over the chicken and mix to combine. Set the chicken aside for about 10 mins. ( In that time chopped your all the vegetables which you want to add in your chicken fried rice.)
Heat a wok or large sauté pan over medium-high heat. Swirl in a tablespoon of oil add the whisked eggs. Use a spatula to quickly scramble the eggs, breaking the curds into smaller pieces as they come together. Transfer the eggs to a plate. Drizzle the soy sauce and sesame oil over the rice and sauté them together. Stir in the cooked chicken, scrambled eggs, stir briefly to bring it together, and cook for another 1 to 2 mins.
