
PAV BHAJI RECIPE

Pav Bhaji Recipe is an Indian fast food consisting of a thick spicy vegetables gravy served with soft dinner rolls. In Hindi and Marathi, the word ‘Pav’ means Bread roll or dinner roll and Bhaji means a vegetables dish. Since these are served together as a meal, it is known as Pav Bhaji. Originated in Mumbai as a light and quick meal option fir the textile workers, this Mumbai’s most iconic street food became hugely popular across India. You will find this everywhere right from upscale restaurants to school/college canteens & street side carts in India. Even more you find it in every Indian restaurant abroad. But everyone said that you get the best Pav Bhaji in Mumbai.
PAV BHAJI RECIPE (STREET STYLE VS HOME STYLE)
Usually the street side bhaji is made with more potatoes & onions. Veggies like cauliflower, capsicum & peas are used in little quantities or even skipped.
Street stalls selling Mumbai Pav Bhaji often avoid cauliflower as it turns out to be expensive for them. But while making it at home, it is good to use it as the flavor of bhaji turns out delicious.
PAV BHAJI RECIPE (INGREDIENTS)

FOR BHAJI
1 Medium size Cauliflower
1 Capsicum (roughly chopped )
1/2 inch ginger ( slice )
2-3 Garlic ( chopped )
Water ( according to need )
5 Medium potato, cubed ( Boiled )
1 Carrots, pilled, (roughly chopped)
1/3 cup green peas
Salt to taste
2-3 Tbsp Butter
PAV BHAJI RECIPE FOR TEMPERING
1 cup Onion, (chopped)
1 1/2 cup Tomato, (chopped)
2-3 Green chili, (chopped)
2-3 Tbsp Butter
1/4 cup oil
1/2 Tbsp ginger, garlic paste
Salt to taste
1/4 cup fresh Tomato puree
1 tbsp Kashmiri red chili powder
1 Tbsp Pav Bhaji Masala
Boiled & Mashed vegetables
1 Tbsp Coriander leaves, (chopped)
FOR TOASTING PAV
1 Tbsp butter
A pinch of Kashmiri mirchi powder
2 pav
FOR MASALA PAV
1 Tbsp Butter
Prepared Masala
2 Pav
FOR GARNISH
Onion (roughly chopped)
Lemon
Butter pav
Coriander sprig
PAV BHAJI RECIPE (PROCESS)
FOR BHAJI
In a large pot or pressure cooker add cauliflower, capsicum, ginger, garlic, water, potato, green peas, carrot, salt, butter than cover and cook until they are soft.
Now mash everything properly with a masher and set aside.
FOR TEMPERING
In a large tawa or a shallow pan heat butter oil then add onion and sauté until translucent.
Now add green chilies, tomatoes, ginger garlic paste, salt and sauté until they are soft.
Add fresh tomato puree and continue cooking for 6-8 mins.
Then add capsicum and continue cooking for another 2 mins. Once done remove. 2-3 tbsp masala aside for further use.
Now, add Kashmiri red chili powder, butter, Pav Bhaji masala and sauté for a mins.
Now add boiled & mashed vegetables, butter, Pav Bhaji masala, water, sugar and continue cooking for another 2-3 mins.
Finish the pav bhaji with coriander leaves and switch off the flames.
Serve hot our Pav Bhaji Recipe is ready with toasted pav, onion, lemon, coriander leaves.
FOR TOASTING PAV
In a hot pan add butter Kashmiri red chili powder and coat the pav in that inside out and toast it properly, set aside for further use.
FOR MASALA PAV
In a hot pan add butter, prepared masala that was kept aside then coat the pav inside out properly and then toast it. set aside for further use.
